Shrimp Stuffed Bell Peppers in SOS Shells
Italian shrimp stuffed bell peppers served conveniently in SOS shells.

- 12 SOS Shells
- 1/4 lb. butter
- 1 lb. shrimp, chopped in half
- 1/3 c. chopped celery
- 1/3 c. chopped onions
- 1 tsp. tomato paste
- 7 med. bell peppers
- 2 c. Italian bread crumbs
- 1/2 c. parmesan cheese
- Salt and pepper to taste
- Cut bell peppers in halves lengthwise and clean out inside and seeds, put in cold water. Bring to boil and boil for 10 minutes. Drain and set aside. Save 1 bell pepper raw for dicing and cooking with the rest of ingredients.
- Stuffing: Melt butter in pot; add onions, celery, 1 bell pepper (cleaned) and tomato paste. Let cook until onions are wilted. Add shrimp and cook about 6 minutes. Add Italian bread crumbs and season to taste. Mix well. Spray SOS with cooking non-stick spray. Fill each pepper with stuffing and place in SOS. Sprinkle with bread crumbs, cheese and put on flat pan. Place in 350 degree oven for 15 minutes.
